Alex Head, founder of Social Pantry, shares her recipe for a meat-free taco feast.
An ideal meat substitute, jackfruit mimics the texture of pulled pork – making it the perfect alternative for tacos and curries
Serves 4
Ingredients
For the tacos:
• 1 can, green jackfruit in water or brine, drained, rinsed and cut into thin long slices
• 1 small onion, thinly sliced
• 1 tsp chilli powder
• 1 tsp cumin
• 1 lime, juiced
• 150ml water
• Flour or corn tortillas
• Salt and pepper
• Coriander for garnish
For the salsa:
• 1 avocado, smashed
• ¼ red onion, finely diced
• ½ red bell pepper, finely diced
• 1 tbsp jalapeño, finely diced
• 1 tbsp chopped coriander
• 1 tbsp chopped mint
• ½ lime, juiced
• Salt and pepper
Method
1 First, make the taco filling. Sauté the onions in oil until translucent, roughly 6 minutes.
2 Next, add the jackfruit followed by the chili powder, cumin, lime juice and water. Cover and simmer for about 5 minutes.
3 Once the jackfruit has softened, shred using two forks or cut into strips.Season with salt and pepper to taste.
4 Make the salsa by combining all the ingredients together, season to taste and build the tacos.
5 Serve on a gorgeous plate and encourage your guests to get stuck in!
