Opening its doors to foodies on 1 September, here’s everything a fine dining lover needs to know about Alex Dilling at Hotel Café Royal
If you love French cuisine and beautiful surroundings, it’s time to make a booking. Independently owned Alex Dilling at Hotel Café Royal will open to the public this September, serving contemporary French dishes with a dose of flamboyance. Following the success of his time at the helm of Two-Michelin star kitchens, most recently ‘The Greenhouse’ and ‘Helene Darroze at The Connaught’, Dilling’s opening represents the culmination of 20 years of culinary experience and a relentless passion.
With just 34 covers, the elegant and intimate dining space is set to be one of the city’s most exclusive fine dining hot spots, overlooking the iconic curve of Regent Street and across to Piccadilly Circus. Intricate details such as hand painted silk panelling will surround the room and cosy booths will be interspersed between two tops, all made bespoke for the new restaurant by English artisans.

Pay a visit to devour contemporary French cuisine which draws on inspiration from the classic gastronomy of the country, combined with a young and energetic sense of hospitality. Menus will start at £65 for a three-course lunch. Moving into the evening, the six-course dinner menu, with an amuse bouche and petit fours will be priced at £155. A chef’s special menu, also of six courses and additions will showcase the season’s most elevated ingredients and be on offer in the evening for £195.
Tempting dishes are set to include the likes of “Boullibase” – Marinated red mulled with cockles and oyster cream, “Œuf Dore” – Smoked sturgeon, potato & aged Kaluga caviar and a Golden Egg, featuring Araguani chocolate, Smoked Piedmont hazelnut, Tahitian vanilla.

Alex Dilling, Executive Chef at Alex Dilling at Café Royal told The Wordrobe: “The opening of my restaurant at Hotel Café Royal is a culmination of my experiences working around the world and with some of the most exciting and talented chefs for over 20 years. ‘Alex Dilling At Hotel Café Royal’ will represent everything that I love about French cuisine and being able to work with the most incredible products meticulously sourced from artisans and producers from the United Kingdom and the rest of Europe.”
He continued: “My dream, together with my talented team, is to not only be one of the most ambitious restaurants in the country but one where our guests feel at home and can come time and time again. There is no better location for this than in the iconic Hotel Cafe Royal.”

Guillaume Marly, Managing Director of Hotel Café Royal added: “Oscar Wilde chose the Café Royal – and its unmatched wine selection – for his salon, while Winston Churchill favoured our steaks, stilton and champagne. Even those who differed on most things, came together here to enjoy an atmosphere and range of gourmet pleasures found nowhere else and it is clear our latest venture with Alex Dilling looks set to continue this illustrious tradition. Alex joins Albert Adria as another world-class chef we are proud to be able to showcase to Londoners and international travellers alike.”
