How green does your garden grow? Veuve Clicquot, the iconic champagne house, has launched an exciting new foodie experience with top chef Robin Gill – and it’s perfect for a luxe autumnal bite

Introducing the La Grande Dame ‘Garden Gastronomy’ experience at The Zebra Riding Club restaurant in Hertfordshire, where foodies can enjoy chef Robin Gill’s sumptuous cuisine through a special tasting menu, with the signature dish paired with a glass of La Grande Dame 201

La Grande Dame is Veuve Clicquot’s showcase of excellence. Paying a tribute to Madame Clicquot herself who used to say “Our black grapes give the finest white wine”, La Grande Dame respects Madame Clicquot’s love for Pinot Noir using mostly historical Grands Crus from Veuve Clicquot’s terroir.

For this new concept Veuve Clicquot and chef Robin Gill created an essential cuisine that aims to preserve the authentic taste of exceptional produce until it reaches the plate, in the same vein as Madame Clicquot. Focusing on local and seasonal ingredients, each dish expresses the truth of the product around which it is built. Vegetables take centre stage, while meat, fish and eggs are a condiment to the experience and bring out a gastronomy that is highly spontaneous and experiential.

Robin’s training as a young chef was spent in rural environments, led by nature, in some of the leading gastronomic kitchens across Europe and Scandinavia – which has naturally had a large impact on his cooking style today. Seasonality is at the centrepiece of Robin’s dishes, constantly sourcing the best ingredients all year round, bringing out the finest that nature has to offer. This endeavour complements Veuve Clicquot’s same strategy with their black grapes that produce La Grande Dame; a champagne of excellence.

Designed to pay homage to local vegetables, the Garden Gastronomy menu reflects the unique rhythm of the seasons and an authentic sense of place. In their elegant simplicity, the vegetables accentuate the complexity of La Grande Dame composed of wine from one of the most historical Grand Cru vineyards.

They offer infinite pairing possibilities through an aromatic palette, requiring great creativity to invent the recipes along the seasons. Vegetables, herbs, fruits all picked in the morning are cooked in the afternoon. Extremely fresh, with the outmost expressive power, intensity, and complexity of aromas: perfect to pair with the exceptional champagne that La Grande Dame is.
