


Impress (or scare) party guests with these deliciously lifelike vegan witch finger cookies
Dairy-free, egg-free, gluten-free – but definitely not scare-free! If you love a bewitching Halloween bake, try your hand (get it) with these vegan witch finger cookies.
Ingredients
• 95 grams rice flour
• 16 grams maple syrup
• 16 grams smooth natural peanut butter
• 16 grams plant-based milk
• 1tsp vanilla essence
• 5 Doisy & Dam Peanut D&D’s
Method
1 Preheat oven to 180°C.
2 In a large bowl, combine rice flour, maple syrup, vanilla essence and peanut butter. Use your hands to form a dough ball, that should be soft but not overly sticky. If mixture doesn’t stick together immediately, add small amounts of plant-based milk to combine.
3 Separate the dough into 5 equal balls, then roll each piece of dough into long finger shapes. Press on sides to flatten and add texture.
4 Use toothpick, skewer or knife to create wrinkles on the knuckles by pressing into dough and dragging across.
5 Press Peanut D&D’s in to create ‘nails’ at the top of each.
6 Bake at 180°F for 10 minutes or until cookies are golden brown. If D&D’s crack during cooking and you prefer a clean look, gentle remove and replace with new whilst still warm. Allow to cool completely. Please note, these biscuits can be delicate so be careful!
