


If you’re a fan of sustainable fine dining, it’s time to clear the calendar (and your plate). Taking place on 30th October, Michelin-starred SanBrite, the acclaimed restaurant from Italy’s Dolomites, will be taking over The Petersham in Covent Garden exclusively for one night only
Featuring seven courses of edible heaven, San Brite’s Chef Riccardo Gaspari will present a unique tasting menu that reflects his philosophy of combining traditional techniques with contemporary flair, drawing from his family farm and rich experience training under the guidance of Massimo Bottura.
SanBrite’s approach to ‘agricucina’, or regenerative cuisine rooted in local, natural ingredients – mirrors The Petersham’s commitment to responsibly sourced, organic produce.
Each of Riccardo’s dishes start with ingredients sourced directly from his family’s farm, which heralds’ sustainability and celebrates the bounty of the Dolomites, which awarded them a Green Michelin Star for sustainability.
The exclusive seven-course menu will feature a range of carefully crafted dishes, showcasing SanBrite’s unique regenerative cuisine.
This one evening offers a rare opportunity to experience their innovative approach in the heart of London, set against the iconic backdrop of The Petersham.

Known for its lush garden setting and commitment to the slow food movement, The Petersham partners with organic suppliers and sources produce from their own Haye Farm in Devon, reflecting their dedication to sustainable cuisine.

This collaboration is a chance to bring together two different landscapes with a shared love for honest food and sustainable practices.”
