Plant-Based Burgers with Sesame Seeds & Asian Slaw


Vibrant, colourful and bursting with juicily fresh flavour. This plant-based dish uses Beyond Burgers cooked with sesame seeds for an added crunch, which pair perfectly with a nourishing veggie-packed Asian slaw salad


Salads don’t have to be boring and bland – this deliciously fresh creation is brimming with nutrients and colours. Plus, with 19g of plant-based protein per burger, it’ll keep you full and satiated for hours. You can make the Asian slaw with a heap of different vegetables too, which makes it super handy for using up spare fridge items.

Ingredients
For the Asian Slaw:
• 450g shredded/chopped/grated vegetables (I used red cabbage, carrots, cucumber, red bell pepper, snap peas, and broccoli). The options are endless – radishes, white cabbage, Brussel sprouts can all be used).
• For topping: sesame seeds, coriander or parsley

For the Asian Slaw Dressing:
• 3 tablespoons extra virgin olive oil
• 1 tablespoon toasted sesame oil
• 2 tablespoons maple syrup
• 2 tablespoons white wine vinegar
• 1 tablespoon soy sauce 
• sprinkle of Himalayan salt
• 1 tablespoon ginger, finely chopped
• 1 pressed garlic clove

For the sesame Beyond Burger:
• 1 teaspoon sesame seeds
• 1 Beyond Burger patty

Method
1 Once washed and prepped, combine all veggies in a large bowl and stir well until thoroughly mixed.
2 Whisk all dressing ingredients together then pour 2/3 of the liquid into the slaw and toss until evenly covered.
3 Transfer the remaining dressing into a ramequin.
4 Press the sesame seeds firmly into one side of the burger patty using fingers or back of spoon. Heat griddle with olive oil or cooking spray then cook the Beyond Burger patty evenly for 4-5 minutes on each side. Repeat if using more than one.
5 This salad serves two, so add half the slaw to a plate and top with the cooked Beyond Burger, then sprinkle extra sesame seeds. Serve immediately.
