
Fine dining aficionados, forks this way. Michelin-starred chefs Endo Kazutoshi and Tom Aikens are cooking together for one night in July at Muse, Belgravia – and you’re invited to the table
Endo Kazutoshi of one-starred Endo at the Rotunda has announced his next four-hands dinner on his summer tour whilst the Rotunda is shut for refurbishment, this time in the heart of London with Michelin-starred chef Tom Aikens at his restaurant Muse.
On Wednesday 10th July, Endo and Tom are cooking a one-off tasting menu combining Endo’s Edomae style of sushi – a centuries-old technique particular to Tokyo – with Tom’s seasonally driven approach.
Guests will start the evening at the downstairs bar with Endo serving his signature ‘business card’ alongside other hand rolls and nigiri before being led upstairs to the dining room. Every dish will have elements of both chefs’ cuisine, whether horseradish oil instead of wasabi or sticky rice used in a dessert.
Both chefs take inspiration from their upbringing, Endo from his family sushi restaurant and the fish markets of Tokyo, and Tom from growing up in the countryside surrounded by local and seasonal produce.
Endo says of the collaboration “Ever since I ate at Muse it has stuck in my head and so to be able to cook alongside Tom and bring our menus together – which both take inspiration from our childhood and memories – is something I’m very excited about. I’m also a big fan of the interiors so I’m looking forward to creating something different and unique in the space.”

Full of beans

My mother used to say that I was always full of beans. It goes without saying, I was an energetic and lively child, and nothing has changed! This dish is packed with an array of seasonal beans providing bags of energy.

Many of you will remember your mother’s voice when asking “what’s for dessert? All I will say is that it is a sweet, seasonal delight!

Endo at the Rotunda is situated at the top of the television centre in White City and has been shut since March for refurbishment with a reopening date in September. Whilst it’s closed, Endo has been using his time to collaborate with other chefs and gain inspiration from their cuisines. His tour has taken him from Edinburgh to Cornwall and Milan to Japan.
