


These plant-based pancakes are packed full of healthy omega-3 fats courtesy of a hefty sprinkling of brain-boosting chia seeds. Dairy-free and made without egg, whip up a batch for a Veganuary feast this month
These fluffy plant-based chocolate pancakes are packed with chia seeds, which add a delicious texture to an already fluffy pancake! Chia seeds are also full of antioxidants, fibre and healthy omega-3 fat. I love making this on a weekend, when I have a little more time to make as much mess as I want. The rolled oats and buckwheat flour are also excellent energy for a winter run too!


Ingredients
– 1/2 cup gluten-free rolled oats
– 1/2 cup buckwheat flour
– 1 small ripe banana
– 1tsp baking powder
– 1heaped tsp cacao powder (add more if you want it super chocolatey)
– 1tsp vanilla extract
– 1/2 cup oat milk
– 1/2 cup water
-1/3 cup chia seeds
– extra: syrup and fruit for topping
Method
1 Combine all ingredients other than the chia seeds in a blender.
2 Blend until a smooth batter is formed, then transfer the mixture to a bowl and heat a frying pan with coconut oil or cooking spray.
3 Cook spoonful by spoonful on both sides, then stack on a plate, add toppings if desired then serve.
