World-Renowned Chefs Albert Adrià and Alex Dilling Team Up For Two-Night Pop-Up

Providing true edible enchantment, two acclaimed Michelin-starred chefs will come together for just two exceptional gastronomic evenings at Hotel Café Royal this September – and you’re invited


On 9th and 10th September 2025, the globally acclaimed chefs, Alex Dilling, Chef Patron of his two Michelin-starred restaurant at Hotel Café Royal, and Albert Adrià, lauded as one of the ‘world’s best chefs’, and the pioneering force behind Cakes & Bubbles, will come together for a rare and exclusive ‘four-hands’ dinner. 

Hosted in the intimate 34-seat dining room of Alex Dilling at Hotel Café Royal, gourmands can look forward to an evening of exceptional culinary collaboration. Guests will be personally introduced to the chefs themselves over exceptional drinks and a selection of hand-crafted canapés.

The meticulously curated eight-course tasting menu will blend traditional French gastronomic cuisine with innovative and imaginative flair. Dishes will include Dilling’s iconic Hunter Chicken, elevated with a one-off sauce created by Adrià, showcasing his legendary creativity.

Diners can expect immersive experiences and playful surprises throughout the evening, as the two chefs work together to create theatrical culinary magic. 

This collaboration marks a major moment for the capital’s dining scene, as Albert Adrià makes a rare appearance in London for this very special occasion. Hailed as one of the most influential chefs of the 21st century, Adrià built a gastronomic revolution alongside his brother Ferran at the legendary three-Michelin-starred elBulli, consistently ranked the world’s best restaurant before its closure in 2011.

Since then, he has created an empire of award-winning restaurants in Barcelona – from the perpetually sold-out tapas bar Tickets, to the modern Michelin-starred Mexican restaurant Hoja Santa, and the critically acclaimed Enigma, where he is currently Head Chef. Adrià was also voted The World’s Best Pastry Chef by The World’s 50 Best Restaurants, further cementing his status as a culinary pioneer.

In London, he is now known for Cakes & Bubbles, his first permanent site outside Spain, which launched in 2018 at Hotel Café Royal. Originally inspired by La Dolça, the beloved dessert-only area at Tickets , Cakes & Bubbles brings Adrià’s signature playfulness and innovation to the world of pastry and Champagne. 

Alex Dilling is widely regarded as one of the UK’s leading culinary talents. Having trained under Alain Ducasse and helmed Two-Michelin star kitchens, most recently ‘The Greenhouse’ and ‘Helene Darroze at The Connaught’, he opened his restaurant at Hotel Café Royal in 2022.

Within a year, it earned two Michelin stars, praised for its contemporary interpretation of classical French gastronomy and Dilling’s obsessive commitment to quality, technique, and elegance.
