How To Make Nela’s White Christmas Cocktail

 

Davide Mangiamele, Bar Manager of West London’s Nela shares how to conjure a delectably creamy White Christmas cocktail


Ingredients 
● 45 ml Don Julio 1942
● 20 ml White Chocolate–Vanilla Syrup
● 30 ml Almond Milk Clarified Nog Base
● 15 ml Amontillado sherry
● 1 dash saline (10%)
● Homemade Elements

For the White Chocolate –Vanilla Syrup
● 200g white chocolate
● 200ml hot water
● 200g sugar
● 1 vanilla pod (split and scraped)

1 Melt chocolate gently in water, add sugar and vanilla, whisk until
smooth, strain fine.

Store chilled (lasts 1 week). 

For the Clarified Almond Milk Nog Base

● 100 ml whole milk
● 500 ml almond milk
● 1 whole egg
● 1 egg white
● 50 ml honey
● 30 ml lemon juice
● Whisk egg, egg white, milk, and honey together.
● Slowly add lemon juice to curdle.
● Strain through coffee filters or fine cloth. Result: a pale, silky-white, nog-like base.

Method

● Combine all ingredients in a shaker with ice.
●  Shake hard (or blend briefly for extra foam).
●  Double strain into a chilled sniffer

Garnish and presentation
● Red Ribbon- golden leaf
