Available from September 9th 2025 for a limited time only, the City’s first and highest omakase restaurant, LUNA Omakase, is set to offer an exquisite Japanese wine pairing in collaboration with the acclaimed Château Mercian, the oldest Japanese vineyard.

Set high above the city on the 9th floor of 100 Liverpool Street, this intimate twelve-seat restaurant offers sweeping views of St Paul’s Cathedral, is led by Executive Chef Leonard Tanyag.

Blending tradition with innovation, LUNA Omakase reimagines Sosaku-style Edomae cuisine, celebrating the finest seasonal ingredients through a 12 course menu that evolves with the 12 phases of the moon.


The partnership will run for the whole of September and will see Michele Orbolato, Thesleff Group’s Head of Wine and Sake, hand-select four exceptional Japanese wines, offering one of London’s most refined and distinctive dining experiences.

“LUNA is the only restaurant in London to present such an exquisite line-up of Japanese wines,” says Orbolato. “Each bottle reflects the precision and artistry that compliments Chef Tanyag’s omakase – subtlety, elegance, and a profound respect for terroir. The result is a pairing experience that is as rare as it is memorable.”

Château Mercian is Japan’s oldest established winery in Japan, founded in 1870 after sending two young men to France to master European winemaking.

Based in Yamanashi, Nagano, and Fukushima, it produces award-winning wines from Koshu, Chardonnay, Merlot, Syrah, Cabernet Franc and Petit Verdot, while also experimenting with Albariño, Mencía, and more. Committed to sharing expertise, Château Mercian has played a central role in advancing Japanese winemaking, contributing to the industry’s growth and elevating its global reputation.

With only twelve seats per service, this collaboration offers one of London’s most exclusive gastronomic experiences, where each course, from delicate Nigiri to indulgent Wagyu, is elevated by the finesse and elegance of Japan’s finest wines from Château Mercian. The Wines


1. Château Mercian Rivalis Left Bank Chardonnay
Tasting Notes: Bright yellow with aromas of pineapple, mango, grapefruit, orange blossom, vanilla, and butter. A harmonious palate with rich acidity and a long, elegant finish.
 Food Pairing: Perfect with LUNA’s King Crab Nigiri or Sea Bream with Yuzu Salt.
 Awards/Production: From the left bank of the Chikuma River, Nagano, grown in clay- rich soils.

2. Château Mercian Iwade Koshu Ortum (Limited release: 1,100 bottles)
Tasting Notes: Pale yellow with notes of ripe grapefruit, white peach, Japanese citrus (yuzu, kabosu, sudachi), and jasmine. Rounded acidity, minerality, and a fresh, cooling finish.
Food Pairing: Complements Bluefin Tuna Belly tartare with Oscietra Caviar or Sea Trout Nigiri.
Awards/Production: 100% Koshu from Iwade Vineyard, Yamanashi; fermented in  stainless steel, aged four months in tank

3. Château Mercian Koshu Gris de Gris
Tasting Notes: Reddish-orange hue; aromas of apricot, candied pear, Darjeeling tea, and rose, with vanilla from eight months in oak. A layered, textural palate.
Food Pairing: Ideal with Yellowtail Tartare on grilled Sushi Rice or Seared Scallop with Truffle.
Awards/Production: Koshu from Fuefuki district; International Wine Challenge 2023 Bronze, IWSC 2023 Silver.

4. Château Mercian Mariko Syrah
Tasting Notes: Deep purple with pepper spice, violet, raspberry, cherry, blackcurrant, bitter chocolate, and vanilla. Balanced acidity with fine tannins.
Food Pairing: Perfect with LUNA’s Wagyu A5 Sando or Seared Wagyu Nigiri.
Awards/Production: Premium Syrah from Mariko Vineyard, Nagano; Decanter World Wine Awards 2023 Silver.
