This winter, the Grande Dame of the city of lights – and Paris’s first Palace hotel – will unveil the very first Dom Pérignon dining room, as the hotel’s celebrated Executive Chef, Eric Frechon, and Chef de Cave of Dom Pérignon, Vincent Chaperon, join forces to bring an exquisite culinary vision to life.
Designed for just two to six guests, the ultra-exclusive immersive journey takes one through expert combinations of Dom Pérignon’s best-in-class millésimes, paired with delectable French gourmand delights. This fusion of culinary and oenological brilliance, conceived by the two prestigious French Houses, promises an extraordinary experience and a feast for the senses.

This is no ordinary dining room. A bespoke bulle, or bubble, has been specially conceived for the experiential journey, divided into two sections — one for the effervescent prelude and the other for the main act. Inhabiting the centre of Le Jardin Français, Le Bristol’s elegant courtyard garden at the heart of the hotel, the two private spaces create an avant-garde visual manifestation, as an elegant play of contrasts exists between Le Bristol’s luminous setting and the more mysterious universe of Dom Pérignon.
Contemporary lines and glamorous touches create an ambiance that seamlessly blends modernity and opulence.
In a sensational trompe l’oeil effect, one-way mirrors preserve the privacy of guests while creating an alluring effect from the exterior – a place to see without being seen – offering an extra layer of mystery and anticipation to the culinary adventure.
The journey begins in the immersive bar, the only one of its kind in the world, where exceptional cuvées normally only offered by the bottle are served by the glass, accompanied by a tantalising selection of small bites; an enticing prelude to the evening.
Here, the evening’s overture unfolds, introducing the meeting of the minds between the Chef and Cellar Master, whose mastery of their individual crafts are only surpassed by the extraordinary fusion of the two. A prestigious dialogue begins, defined by a shared quest for quintessential flavour pairings and the pursuit of the perfect balance, making for an unforgettable evening.
A brief interlude and a shift of scenery places guests around the dinner table, where the main dining event begins. The atmosphere intensifies as the specially curated menu is presented. One can expect caviar de Sologne complemented by Dom Pérignon Vintage 2013 and pan-seared wild turbot with white truffle paired with the remarkable Dom Pérignon Vintage 2004 Plénitude 2 cuvée.
This experience has been curated to remember for months post-bite. Each course has been designed to offer a masterpiece, crafted with outstanding detail to create the perfect marriage of flavours. It is not just a meal, but a poetic expression where the creations of a decorated Chef seamlessly meet the cultivated nuances of the world’s finest Champagnes. Visitors will embark on a gastronomic story where every dish tells a tale, and every sip is a celebration of culinary artistry.
As the captivating epicurean event comes to an end, a memorable finale awaits. For a soft and delicate conclusion, black truffle crème glacée served with a hazelnut emulsion and gianduja chocolate is presented, along with a final glass of bubbles, the Dom Pérignon Vintage 2002 Plénitude 2 cuvée, sure to delight the taste buds.
