The Wordrobe caught up with Alun himself to find out a little more…

What inspired you to become a chef?
My grandfather was in the merchant navy and travelled the world, the stories he told me as a young lad filled me with early wanderlust and a hunger for adventure.

Being a chef was a way to do this and notable greats chefs at the time fuelled the passion. Anton Mossimon, Pierre Koffman, The Roux Brothers, Raymond Blanc…

Where did you train? Tell us more about your culinary background…?
I went to catering college but I would say it wasn’t until I entered the world of work that my training really began.

My first proper job was in Switzerland. Classical old 5 star luxury hotels, large brigades and very hierarchical. The more senior the chef the bigger the hat. As a young English man I would say that discipline was very much drilled into me during these early years. I then went on to work in 8 countries in 4 continents.
