Dale Pinnock’s Steak Salad


A steak every now and again can give you such an iron fix that it will really last.

The vitamin C in the spinach leaves and dressing increase your absorption of it, too! A winner all round

For the dressing:
• 2 teaspoons horseradish sauce
• 1/2 lemon, juiced
• 1 tablespoon extra virgin olive oil

For the salad:
• 1 sirloin steak
• 2 handfuls baby spinach
• handful pea shoots
• 3-4 radishes, sliced

1 Combine the dressing ingredients and whisk well to form an emulsion.
2 Cook the steak according to your preference, then leave it to rest for five minutes. Slice.
3 Combine the leaves, shoots and radishes, top with the steak and drizzle with the dressing.
